Recipes : No egg pie crust
Here is a quick and very easy recipe for pie crust that is you measure the ingredients exactly will never fail to impress. This is a pie crust for us frugal cooks who want a perfect pie but use a minimum of ingredients.
Single pie crust (double recipe for a crust on the bottom and top of pie)
1 and 1/3 cups regular flour (Not self rising type)
1/2 teaspoon salt
1/2 cup Crisco (or any solid shortening)
3 tablespoons cold water
Combine flour and salt in a bowl, blend with a fork. Cut in shortening with a pastry blender until it resembles course meal. Blend so it is of a very fine texture. Add cold water a tablespoon at a time and mix dough until it forms a ball of dough and does not stick to the side of the brown. Do not knead the dough too much or your crust will be tough and not flaky. Roll the dough out on a floured surface with a flour covered rolling pin. Roll dough from the center towards the edges making sure it is not uneven or have any tears in the dough.. Fold the dough in half an slip onto a greased and floured pie plate. This recipe has never failed in over five decades of making pies. If you want you can whip and egg yoke and brush on the top crust and sprinkle with sugar or simply brush top with milk and this will give your crust a golden sheen.
Remember if pie is to bake a long time or in a very hot over to cover the edges of pie crust with tin foil to reduce excess browning.
