Wild hog meat isn’t something everyone gets to eat, but if you do, it can be a delicious experience; especially if you take care to cook it right.
One of the very best ways to cook wild hog meat is over a spit. This requires some effort of course and assumes that you will have a number of people about to help you eat it all. What you do is skin and gut the hog and then shove a pole (spit) though him from front to back. Meanwhile, you start a fire in a fire pit that has rests for the spit on either side and a crank handle. The fire pit needs to be at least as long as the hog so that all of it will get cooked and needs to be burned over time so that you build up a pretty deep layer of coals and embers. You don’t want a bunch of flames though, because that will burn the outside of your hog. Then, when the fire is ready, you slather your hog with bacon grease, butter, olive oil, lard or whatever else you choose, hoist it over the fire pit and let it start cooking. You don’t have to crank the spit the whole time, just often enough so that you get even cooking throughout the whole hog. Keep it up, letting everybody take turns cranking the spit and occasionally slathering some more oil on him, for several hours, depending on how big your hog is. It should take between four and six hours generally. Then, when it’s done, all you have to do is slice meant right off the carcass; you don’t even have to take it down off the spit. Just walk up, slice yourself some meat onto a plate and then head back to where you’re sitting. This is pretty much the perfect way to eat wild hog.
If you can’t roast your hog over a spit, something that comes close is barbecue grilling that bad boy. After cutting him up, slather him up with bacon fat, or some barbecue sauce or whatever else you like and cook him on your grill. Be sure to cook over a slow heat and make sure there is lots of smoke with the lid down. This will imbue the meat with lots of smoky goodness.
Since some folks don’t care for the natural taste of wild boar, you can also do like you would do with shredded pork; and that is, rip up the meat and let it sit in a sauce of your liking for a few days; then cook it on the grill or even on the stove.
