Whether you are eliminating eggs due to allergies or other health reasons or you are simply enjoying the Vegan diet, there are several natural ingredients that you can use instead of eggs when baking cakes.
Eggs serve different purposes for different types of bakery products. In cookies and muffins, eggs add moisture to the batter and can often be replaced simply by increasing the amount of liquid in the recipe. In cakes, the egg serves as a leavening agent. In other words, eggs are what make the cake light and fluffy. The less eggs in a recipe, the easier it is to substitute an ingredient for the eggs.
The following ingredients can be used as substitutes for one egg in cake recipes:
a cup applesauce, pumpkin, squash, or pureed prunes
One important thing to remember is that any of the above ingredients will add a touch of their flavor to the cake. These substitutes will tend to make the cake denser. To make your cake less dense; you simply need to add an additional one half teaspoon of baking powder to the batter. When using any of the above ingredients, the texture of the cake batter should be similar to a batter made with eggs.
Other egg substitutes are:
1 heaping Tbsp of soy flour mixed with 1 Tbsp of water
2 Tbsps of cornstarch mixed with 2 Tbsps of water
1 Tbsp of finely ground flaxseed whipped with 1/4 cup of water
There are commercially produced egg replacers such as Ener-G-egg replacer. These can usually be found in natural food stores. I have found that while these are a good substitute for eggs they can be pricey and not as easily available as the more natural food alternatives.
A quick and easy recipe for a cake without eggs is:
Mix 1 box of cake mix with one 10 ounce can of soda. (You may need to take a few sips out of a 12 ounce can before adding to the cake mix. Read the cake mix ingredients carefully to make sure there are no eggs already in the mix.) Mix the two ingredients and bake as directed on the cake mix box.
Variations of this recipe include: for a chocolate cake add dark sodas such as Coke or Pepsi, for a white or yellow cake add lighter soda such as Sprite or 7-Up.

Cooking without eggs can be a challenge, but with a little research and the willingness to try different ingredients you will find superb recipes that not only fit into your diet, but satisfy your dessert cravings as well. Now you can have your cake and eat it too, without the help of eggs.
