Cheese Lace Crackers
* 1 cup grated Parmesan
* 2 tbspn minced, fresh basil
* tbspn fresh lemon zest
Preheat the oven to 400 degrees.
Mix all of the ingredients in a bowl. Spoon heaping mounds of the mixture, inch apart, on a silicone baking sheet or parchment lined baking sheet. Tap each mound down, lightly.
Bake for 3 to 5 minutes until each lacey treat is crisp and golden.
This recipe is easily adjusted. Swap the grated Parmesan with Asiago or Grana Padana cheeses. Use fresh Cilantro or Parsley in place of the basil.
Try the peppery flavor of finely minced Arugala lettuce or Baby Spinach with a bold Swiss cheese. These hearty lettuces will hold up to the baking process just as well as herbs.
