Have you ever seen people sipping cocktails out of a pineapple shell and thought to yourself, "I would like to do that too"? Or perhaps thought, "That looks ridiculous, but it also seems like it could be an enjoyable way to drink a cocktail"? I certainly have. It is one of the most fun, silly, and festive ways to drink a cocktail, perfect for a shared drink.
This recipe, a non-alcoholic cocktail known as a Coconut Islander, serves four people. For this reason, a pineapple is a perfect "glass" to use. I recommend using crazy straws (the ones with lots of loops and swirls) to dress up the drink and make it that much more fun to look at.
This drink uses the flavors of pineapple and coconut to its best advantage, so anyone who loves these flavors will be in heaven! Talk about a perfect summer drink - you won't find anything that tastes more like the tropics than this drink!
COCONUT ISLANDER DRINK RECIPE
4 measures fresh pineapple juice
4 tablespoons creamed coconut
4 measures milk
2 tablespoons crushed pineapple
3 tablespoons coconut flakes
Small pieces of fresh pineapple
1. Slice the top off of the pineapple. Hollow out the flesh from it and set it aside for a snack later. You may wish to keep a bit out to use in the drink.
2. In a blender, mix the fresh pineapple juice, creamed coconut, milk, crushed pineapple, and coconut flakes. Blend with the crushed ice until the mixture runs smooth and frothy. It should take between 30 and 40 seconds.
3. Pour the mixture into the hollowed-out pineapple shell, decorate with a few pieces of pineapple and the cherries, and add four straws.
4. Serve and share with three of your friends!
